Starting the count down to Christmas dinner. Standing rib roast. Yorkshire puddings. Melting potatoes. Today I wrapped the rib roast in cheese cloth and it will be in the fridge for the next 5 days to air dry. It’s sort of a dry aging. Looking forward to this menu. So glad I have 2 ovens. It’s going to be way toooo cold to do anything outside on a grill or smoker. Now what’s with the oysters. Christmas Eve. Oyster stew. A little nostalgia. I remember my father doing oyster stew every Christmas Eve. And then opening 1 present. I don’t remember him spending much time in the kitchen. This was his once a year. He used lots of butter and heavy cream. And has to have oyster crackers. Not many thing of the past I remember…but oyster stew is one of the good things.
